  • Deluxe Fajitas
    The Hyatt’s SWB famous fajitas with a choice of two meats – chicken, beef, or fire-roasted veggies. Accompanied by Spanich rice, charro beans, chips, queso, tomatillo salsa, smoked onion salsa, cheddar cheese, guacamole, jalapeños, sour cream, and flour tortillas. Gluten-free and vegan options are available on request.
  • Southwest Mac & Cheese
    Choice of Grilled Chicken/Smoked Brisket/Pork Belly, Cavatappi pasta, queso, jalapeno cornbread crumble, dinner rolls w/ sea salt butter, house salad w/cilantro ranch dressing)

    Smashed confit marble potatoes, grilled asparagus, roasted cluster tomato, chimichurri

  • Texas Smokehouse Sampler (groups of 10 or more only)
    Two- and three-meat packages. Includes choice of pulled pork, smoked brisket, Hudson smoked sausage, or BBQ chicken. Sides include honey BBQ baked beans, Chef’s potato salad, creamy cole slaw, assorted relish tray, cheddar cornbread, buttermilk biscuits, whipped honey butter.

    Chef’s selection of assorted cheeses and cured meats (3 of each).  Includes Texas ranch olive oil + balsamic reduction, pickles, olives, marinated artichoke hearts, seasonal jams & compotes, and Crostini, Lavash, and specialty crackers.
  • Party Time on the Boat (groups of 10 or more only)
    Two of each item per person:                                                                                                      Smoked Wings with Bourbon buffalo sauce, buttermilk dressing, and celery.                                      Smoked Chicken Quesadillas with pico de gallo & pepperjack cheese, and salsa.                              Chopped brisket sliders with Dr. Pepper BBQ sauce.
